Pecan Pie Muffins

Ingredients:

  • 1 cup packed light brown sugar
  • 1/2 cup all-purpose flour
  • 1 cup chopped pecans
  • 2 large eggs
  • 1/2 cup (1 stick) unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract (optional but recommended)
  • A pinch of salt (optional)

 

 

Instructions:

  1. Preheat the Oven:
    Preheat your oven to 350°F (175°C).
    Grease or line a mini muffin tin (makes about 18 mini muffins or 9 regular-sized muffins).
  2. Mix Dry Ingredients:
    In a medium bowl, combine brown sugar, flour, chopped pecans, and salt (if using).
    Stir until evenly mixed.
  3. Mix Wet Ingredients:
    In a separate bowl, lightly beat the eggs.
    Stir in the melted butter and vanilla extract.
  4. Combine:
    Add the wet ingredients to the dry ingredients.
    Stir just until combined—do not overmix.
  5. Fill the Muffin Cups:
    Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  6. Bake:
    Bake for 18–22 minutes for mini muffins or 25–28 minutes for regular muffins.
    They’re done when the tops are set and a toothpick inserted into the center comes out clean.
  7. Cool and Enjoy:
    Let the muffins cool in the pan for 5–10 minutes, then remove and transfer to a wire rack to cool completely.

These Pecan Pie Muffins are buttery, nutty, and taste just like a slice of pecan pie in muffin form—perfect for breakfast or dessert!
