Grandma’s Chocolate Pie (Serves 8)
Ingredients
Pie Crust
1 unbaked 9-inch pie crust (homemade or store-bought)
Chocolate Filling
1½ cups granulated sugar
¼ cup unsweetened cocoa powder
¼ cup cornstarch
2½ cups milk (whole milk preferred)
4 large egg yolks, lightly beaten
2 tablespoons unsalted butter
1 teaspoon vanilla extract
Topping (Optional)
Fresh whipped cream or classic meringue
Instructions
1️⃣ Pre-Bake the Pie Crust
Preheat oven to 375°F (190°C)
Prick crust with a fork and line with parchment
Fill with pie weights or dried beans
Bake 12–15 minutes until lightly golden
Remove weights and cool slightly
2️⃣ Mix Dry Ingredients
In a medium saucepan (off heat), whisk together:
Sugar
Cocoa powder
Cornstarch
3️⃣ Add Milk & Cook
Slowly whisk in milk until smooth
Place saucepan over medium heat
Cook, whisking constantly, until thick and bubbly (about 8–10 minutes)
4️⃣ Temper the Egg Yolks
Spoon a little hot chocolate mixture into egg yolks, whisking
Slowly pour yolk mixture back into saucepan
Cook 2 more minutes, stirring constantly
5️⃣ Finish the Filling
Remove from heat
Stir in butter and vanilla until smooth and glossy
6️⃣ Fill the Pie
Pour hot filling into pre-baked crust
Smooth the top with a spatula
Optional Toppings
Whipped Cream
Chill pie completely (at least 4 hours)
Top with sweetened whipped cream before serving
Classic Meringue
Use reserved egg whites
Spread meringue over hot filling
Bake at 350°F (175°C) for 10–12 minutes until lightly browned
Chill & Serve
Refrigerate 4–6 hours until fully set
Slice with a clean, sharp knife
