Grilled Pineapple Chicken Kebabs

Bring a taste of the tropics to your table with these Grilled Pineapple Chicken Kebabs — tender, juicy chicken paired with sweet caramelized pineapple. Perfect for summer cookouts or an easy weeknight dinner!

Ingredients (Serves 4)

  • 1 lb (450g) boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
  • 1 cup fresh pineapple chunks
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon honey or brown sugar
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon black pepper
  • ¼ teaspoon salt
  • Skewers (soaked in water if using wooden ones)
  • Fresh cilantro or parsley, for garnish

Instructions

1. Prepare the Marinade
In a medium bowl, whisk together the olive oil, soy sauce, honey (or brown sugar), smoked paprika, garlic powder, black pepper, and salt until well combined.

2. Marinate the Chicken
Add the chicken cubes to the bowl and toss to coat evenly in the marinade.
Cover and refrigerate for at least 30 minutes — or up to 2 hours for deeper flavor.

3. Assemble the Kebabs
Thread the marinated chicken and pineapple chunks alternately onto the skewers.
Leave a little space between each piece to ensure even cooking.

4. Preheat the Grill
Heat your grill to medium-high. Lightly oil the grates to prevent sticking.

5. Grill the Kebabs
Place the skewers on the grill and cook for 10–12 minutes, turning occasionally, until the chicken is cooked through (internal temperature 165°F / 74°C) and slightly charred on the edges.

 

 

 

6. Serve and Enjoy
Transfer to a platter and garnish with fresh cilantro or parsley.
Serve with warm rice, a crisp salad, or flatbread for a delicious tropical-inspired meal.
