Loaded Cheesy Bacon Potato Casserole

A warm, creamy, and ultra-comforting baked dish packed with tender potatoes, crispy bacon, and melted cheddar cheese. Perfect for family dinners, potlucks, or when you just want something rich and satisfying straight from the oven.

 

 

 

Ingredients:

6 cups diced potatoes

1 1/2 cups shredded cheddar cheese

1 cup cooked bacon, chopped

1/2 cup sour cream

1/2 cup milk

2 tablespoons butter (melted)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt (adjust to taste)

1/2 teaspoon black pepper

2 tablespoons chopped green onions (optional, for topping)

 

 

 

 

Instructions:

Preheat the oven to 190°C (375°F). Grease a baking dish lightly with butter or cooking spray.

Cook the potatoes in boiling salted water for about 10–12 minutes, until just tender but not falling apart. Drain well.

In a large bowl, mix sour cream, milk, melted butter, garlic powder, onion powder, salt, and pepper until smooth.

Add the cooked potatoes and gently stir until fully coated in the creamy mixture.

Fold in most of the cheddar cheese and chopped bacon, saving a little for topping.

Transfer everything into the prepared baking dish and spread evenly.

Sprinkle the remaining cheese and bacon on top.

Bake for 25–30 minutes, until hot, bubbly, and golden on top.

Remove from the oven and let it rest for a few minutes. Garnish with green onions if desired.

Serving Idea:

Serve warm as a main comfort dish or a hearty side with grilled chicken or steak.
