Holiday Bark Trio
Sweet, simple, and perfectly festive! This trio features three fun flavors—Peppermint Bark, Peanut Brittle, and Ritz Cracker Toffee. They’re great for gifting, snacking, or bringing sparkle to any holiday dessert table. Easy to make and impossible to resist!
Ingredients
Peppermint Bark
- 1 cup mini candy canes, crushed
- 24 oz semi-sweet chocolate chips (two 12-oz bags)
- 24 oz white chocolate chips (two 12-oz bags)
- ½ tablespoon coconut oil
- 1 teaspoon pure peppermint extract
Peanut Brittle
- ¾ cup water
- 2 cups granulated sugar
- 1 cup light corn syrup
- 6 tablespoons unsalted butter, cubed
- 2 ½ cups salted dry-roasted peanuts
- 2 teaspoons vanilla extract
- 1 teaspoon baking soda
Ritz Cracker Toffee
- 1 box Ritz crackers
- ½ cup butter
- ½ cup brown sugar
- 1 cup chocolate chips
- Pinch of sea salt (optional)
Instructions
Peppermint Bark
- Line a baking sheet with parchment paper.
- Melt the semi-sweet chocolate with ¼ tablespoon coconut oil until smooth.
- Spread the melted chocolate evenly on the sheet and refrigerate for 10–15 minutes.
- Melt the white chocolate with the remaining coconut oil and stir in the peppermint extract.
- Pour the white chocolate over the chilled chocolate layer and spread evenly.
- Immediately sprinkle crushed candy canes on top.
- Chill until firm, then break into pieces.
Peanut Brittle
- Line a baking sheet with parchment and lightly grease it.
- In a large saucepan, combine water, sugar, and corn syrup. Bring to a boil over medium heat.
- Cook until the mixture turns a light golden color.
- Add the butter and peanuts. Stir and continue cooking until deep golden.
- Remove from heat and quickly stir in vanilla and baking soda (the mixture will foam).
- Immediately pour onto the prepared sheet and spread thinly.
- Allow to cool completely, then break into pieces.
Ritz Cracker Toffee
- Preheat oven to 350°F (175°C).
- Line a baking sheet with parchment paper and arrange Ritz crackers in a single layer.
- In a saucepan, melt the butter and brown sugar together. Bring to a boil and cook for 3 minutes.
- Pour the toffee mixture over the crackers and spread evenly.
- Bake for 5 minutes.
- Remove from the oven and sprinkle chocolate chips on top. Let melt, then spread into a smooth layer.
- Add a pinch of sea salt if desired.
- Cool completely, then break into pieces.
