Creamy Mixed Vegetable Salad
Crunchy, colorful, and packed with fresh flavor—perfect as a side dish or light meal!
Ingredients
1 cup shredded green cabbage
1 cup shredded purple cabbage
1/2 cup shredded carrots
1/2 cup sliced cucumber
1/2 cup corn kernels (fresh, canned, or frozen and thawed)
1/2 cup diced bell pepper (any color)
1/4 cup chopped green onions (optional)
1/4 cup chopped fresh parsley or cilantro
Creamy Dressing:
1/2 cup mayo
2 tbsp yogurt or sour cream
1 tbsp lemon juice
1 tsp honey or sugar
1/2 tsp black pepper
1/2 tsp salt (or to taste)
1/2 tsp garlic powder (optional)
Instructions
1. Prepare the vegetables:
Add the green cabbage, purple cabbage, carrots, cucumber, corn, bell pepper, green onions, and parsley/cilantro to a large mixing bowl.
2. Make the dressing:
In a small bowl, whisk together the mayo, yogurt, lemon juice, honey, black pepper, salt, and garlic powder until smooth.
3. Combine:
Pour the dressing over the vegetables. Toss well until everything is evenly coated.
4. Chill:
Refrigerate the salad for at least 20–30 minutes to let the flavors blend and the cabbage soften slightly.
5. Serve:
Enjoy chilled as a refreshing side dish, appetizer, or light lunch!
