Ingredients
4 medium potatoes, peeled and diced
4 cups sweet corn kernels (fresh, frozen, or canned)
1 small onion, finely chopped
2 cloves garlic, minced
4 cups chicken or vegetable broth
1 cup heavy cream
1 cup shredded cheddar cheese
2 tablespoons butter
1 teaspoon dried thyme
½ teaspoon paprika
Salt and black pepper, to taste
2 tablespoons cornstarch (optional, for a thicker chowder)
2 tablespoons water
Chopped fresh parsley or green onions, for garnish
Instructions
Add the potatoes, corn, onion, garlic, broth, thyme, paprika, salt, and pepper to the slow cooker.
Cover and cook on Low for 6–7 hours or High for 3–4 hours, until the potatoes are tender.
Lightly mash some of the potatoes with a potato masher to create a thicker, creamier texture.
