Coconut Chocolate Energy Bars – Soft, Protein-Packed, and No-Bake!
Ingredients:
1 cup unsweetened shredded coconut
½ cup almond butter or peanut butter
¼ cup honey or maple syrup
2–3 tbsp cocoa powder
½ cup protein powder (vanilla or chocolate flavor)
1 tsp vanilla extract
A pinch of salt
Optional: chocolate chips or chopped nuts for topping

Instructions
Step 1: Prepare the Pan
Line a small square pan or baking dish with parchment paper for easy removal.
Step 2: Combine Ingredients
In a mixing bowl, add shredded coconut, almond butter, honey (or maple syrup), cocoa powder, protein powder, vanilla extract, and a pinch of salt. Mix until the dough becomes thick and sticky.
Step 3: Shape the Bars
Transfer the mixture into the lined pan. Press it down firmly with a spatula to create a smooth, even layer.
Step 4: Add Toppings (Optional)
If desired, sprinkle chocolate chips or chopped nuts on top and gently press them into the surface.
Step 5: Chill to Set
Place the pan in the refrigerator for at least 1 hour, or until the mixture firms up completely.
Step 6: Cut and Enjoy
Lift the mixture out using the parchment paper, slice into bars, and enjoy! Store any leftovers in the fridge for up to 1 week.
Tips:
For extra texture, mix in a few tablespoons of rolled oats or chopped dried fruit.
These bars make an ideal pre-workout snack or quick energy boost anytime of day.
