Low-Calorie Greek Yogurt Cake (90 Calories Per Serving)

Ingredients:

  • 2 cups (about 500 g) Greek yogurt
  • 3 medium eggs
  • ½ cup (about 60 g) cornstarch
  • Sweetener to taste (erythritol, honey, or another of your choice)
  • 3 drops natural vanilla extract

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease or line a cake pan (8-inch round or similar) with parchment paper.
  2. Mix the wet ingredients: In a large bowl, whisk together the Greek yogurt, eggs, sweetener, and vanilla extract until smooth and creamy.
  3. Add the dry ingredient: Gradually sift in the cornstarch while gently folding it into the yogurt mixture to avoid lumps. Mix until fully combined.
  4. Pour the batter into the prepared pan and smooth the top with a spatula.
  5. Bake in the preheated oven for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool slightly before slicing. You can serve it warm or chilled.

Optional Tips:

  • For extra flavor, add a few berries or a sprinkle of cinnamon before baking.
  • Use a non-stick pan or parchment paper to ensure the cake doesn’t stick.
