Low-Calorie Greek Yogurt Cake (90 Calories Per Serving)
Ingredients:
- 2 cups (about 500 g) Greek yogurt
- 3 medium eggs
- ½ cup (about 60 g) cornstarch
- Sweetener to taste (erythritol, honey, or another of your choice)
- 3 drops natural vanilla extract
Instructions:
- Preheat the oven to 350°F (175°C). Grease or line a cake pan (8-inch round or similar) with parchment paper.
- Mix the wet ingredients: In a large bowl, whisk together the Greek yogurt, eggs, sweetener, and vanilla extract until smooth and creamy.
- Add the dry ingredient: Gradually sift in the cornstarch while gently folding it into the yogurt mixture to avoid lumps. Mix until fully combined.
- Pour the batter into the prepared pan and smooth the top with a spatula.
- Bake in the preheated oven for 25–30 minutes, or until a toothpick inserted into the center comes out clean.
- Cool slightly before slicing. You can serve it warm or chilled.
Optional Tips:
- For extra flavor, add a few berries or a sprinkle of cinnamon before baking.
- Use a non-stick pan or parchment paper to ensure the cake doesn’t stick.
