Mediterranean Cheesy Tomato Cottage Bake (Low-Carb Delight!)

Bring the sunny flavors of the Mediterranean right to your table with this wholesome, cheesy bake! It’s light, low in carbs, packed with protein, and bursting with flavor from tomatoes, basil, and creamy cheeses.

Ingredients (Serves 4):

  • 2 cups cottage cheese
  • 1 cup cherry tomatoes, halved
  • 1 cup chopped spinach
  • 1 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh basil
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano
  • Salt and black pepper, to taste

Instructions:

  1. Preheat the oven to 375°F (190°C). Lightly grease a medium-sized baking dish with olive oil or cooking spray.
  2. Mix the ingredients:
    In a large mixing bowl, combine the cottage cheese, spinach, cherry tomatoes, mozzarella, feta, garlic, oregano, salt, and pepper. Stir until everything is evenly distributed.
  3. Assemble the bake:
    Pour the mixture into the prepared baking dish and spread it out evenly with a spatula.
  4. Bake to perfection:
    Place in the oven and bake for 25–30 minutes, or until the top is golden brown and bubbling around the edges.
  5. Cool and serve:
    Let it rest for a few minutes before serving to allow the flavors to settle. Enjoy warm as a light main course or a flavorful side dish!
