Ingredients

(Serves 6–8)

Strawberry Layer

2 cups fresh strawberries, sliced

½ cup granulated sugar

1 tablespoon cornstarch

1 teaspoon lemon juice

½ teaspoon vanilla extract

Cream Cheese Layer

8 oz (225 g) cream cheese, softened

¼ cup granulated sugar

1 large egg

½ teaspoon vanilla extract

Cobbler Batter

1 cup all-purpose flour

½ cup granulated sugar

1½ teaspoons baking powder

¼ teaspoon salt

¾ cup milk

½ cup (1 stick) unsalted butter, melted

Optional Toppings

Powdered sugar

Vanilla ice cream or whipped cream

Instructions

1️⃣ Preheat & Prepare

Preheat oven to 350°F (175°C).

Grease an 8×8-inch baking dish or similar casserole dish.

2️⃣ Make the Strawberry Filling

In a medium bowl, combine:

Sliced strawberries

Sugar

Cornstarch

Lemon juice

Vanilla

Mix gently until strawberries are well coated. Set aside to allow juices to release.

3️⃣ Prepare the Cream Cheese Layer

In another bowl, beat:

Softened cream cheese

Sugar

Add:

Egg

Vanilla extract

Mix until smooth, creamy, and lump-free. Set aside.

4️⃣ Make the Cobbler Batter

In a large bowl, whisk together:

Flour

Sugar

Baking powder

Salt

Stir in:

Milk

Melted butter

Mix just until smooth — do not overmix.

5️⃣ Assemble the Cobbler

Pour the batter evenly into the prepared baking dish.

Spoon the cream cheese mixture gently over the batter.

Add the strawberry mixture on top, spreading evenly with the juices.

Do not stir — the layers will magically form while baking.

6️⃣ Bake

Bake uncovered for 40–45 minutes, or until:

The top is golden

The center is set

Strawberry juices are bubbling around the edges

If browning too fast, loosely cover with foil for the last 10 minutes.

7️⃣ Cool & Serve

Let cool for 15–20 minutes before serving.
