Mini Sugar Cookie Dough
2 ¼ cups (280g) All-purpose flour
½ tsp Baking powder
½ tsp Salt
¾ cup (170g) Unsalted butter, room temperature
¾ cup (150g) Granulated white sugar
1 large Egg, room temperature
1 ½ tsp Vanilla extract
¼ tsp Almond extract
Smooth Vanilla Icing
3 cups (360g) Powdered sugar
4 tbsp Milk
1 tsp Vanilla extract
Gel food coloring (assorted colors)
Holiday sprinkles, for decorating
Baking & Decorating Steps:
Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
Cream the Base: In a large bowl, beat the butter and sugar until light, fluffy, and creamy (about 3 minutes).
Add Wet Ingredients: Add the egg, vanilla extract, and almond extract. Beat until smooth and well combined.
Add Dry Ingredients: Gradually mix the dry ingredients into the wet mixture on low speed until a soft dough forms.
Chill: Divide dough in half, flatten into discs, wrap, and refrigerate for at least 1 hour. This helps keep the cookies crisp-edged and defined.
Roll & Cut: Preheat oven to 350°F (175°C). Roll dough to about ¼-inch thickness and cut out mini shapes.
Bake: Place cookies on a parchment-lined baking sheet and bake for 7–9 minutes. Cookies should stay pale with just set edges.
Cool Completely: Let cookies cool fully before icing.
Make the Icing: Whisk powdered sugar, milk, and vanilla until smooth and glossy. Tint with food coloring as desired.
Decorate: Ice cookies and decorate with sprinkles. Let icing set completely before serving or storing.
