Orange Fluff Salad

Ingredients

2 cups mandarin oranges, well drained
1 cup mini marshmallows
1 cup whipped topping (such as Cool Whip), thawed
1 cup cottage cheese (small curd works best)
½ cup shredded coconut (optional)
Optional add-ins:
½ cup crushed pineapple, well drained
½ cup chopped pecans or walnuts
1 (3 oz) box orange gelatin powder (for extra orange flavor)

 

 

 

Instructions

Prepare the fruit
Make sure the mandarin oranges (and pineapple, if using) are very well drained to prevent the salad from becoming watery.
Mix the base
In a large bowl, gently stir together the cottage cheese and whipped topping until smooth.
Add the mix-ins
Fold in the mandarin oranges, mini marshmallows, and shredded coconut.
If using orange gelatin powder, sprinkle it in now and mix gently until combined.
Chill
Cover the bowl and refrigerate for at least 1 hour (2–4 hours is even better) to let the flavors blend and the salad firm up.
Serve
Stir gently before serving. Serve chilled as a side dish or dessert.

 

 

Tips
For a lighter texture, you can use low-fat cottage cheese and light whipped topping.
This salad keeps well in the fridge for up to 2 days.
Great for picnics, potlucks, or a quick sweet treat!
