Apple Banana Oatmeal Breakfast Bake with Cherries & Crunchy Brazil Nuts

A naturally sweet, wholesome breakfast packed with oats, juicy apples, bananas, and cherries — perfect for a satisfying morning meal. Soft, fruity, and lightly nutty, this healthy baked oatmeal is great for meal prep and can be enjoyed warm or chilled.

 

 

 

Ingredients

1 cup oatmeal (100 g)

2 apples, peeled and diced

1 ripe banana, mashed

2 eggs

100 g raisins

100 g cherries, pitted and halved

100–120 ml water

1 teaspoon baking powder

50 g Brazil nuts, roughly chopped

Vegetable oil, for greasing the baking dish

1 teaspoon cinnamon (optional)

1 teaspoon vanilla extract (optional)

 

 

 

Instructions

Preheat your oven to 180°C (350°F). Lightly grease a baking dish with vegetable oil.

In a large bowl, combine the oatmeal, baking powder, raisins, and chopped Brazil nuts.

Add the mashed banana, eggs, and water. Mix until well combined.

Fold in the diced apples and cherries. Add cinnamon and vanilla if desired for extra flavor.

Pour the mixture into the prepared baking dish and spread evenly.

Bake for 30–35 minutes, or until the top is golden and the center is set.

Let it cool slightly before slicing. Serve warm for breakfast or enjoy chilled as a healthy snack.

Tips

Replace cherries with blueberries or strawberries if preferred.

For a softer texture, let the oats soak in the water for 10 minutes before mixing.
