This 3-ingredient slow cooker pepper beef is a simple “set-it-and-forget-it” meal that turns inexpensive stew meat into a tender, flavorful dinner. Inspired by classic pepper steak, it combines beef, peppers, and a savory sauce. After a few hours in the slow cooker, the meat becomes melt-in-your-mouth tender and the sauce rich and comforting. Ingredients
2 pounds beef stew meat
2–3 bell peppers, sliced (any color)
1 can (10.5 oz) condensed cream of mushroom soup
Instructions
1. Prepare the Ingredients
Slice the bell peppers into thin strips. If the stew meat pieces are very large, cut them into bite-size chunks.
2. Add to Slow Cooker
Place the stew meat in the bottom of the slow cooker. Add the sliced peppers on top.
3. Add the Sauce
Pour the condensed cream of mushroom soup over the beef and peppers. Do not add water.
4. Cook
Cover and cook:
Low: 6–8 hours
High: 3–4 hours
The beef will become very tender and the peppers soft as everything cooks together.
5. Stir and Serve
Stir gently before serving to combine the sauce with the beef and peppers.
