Ingredients

For the Cake:

  • ½ cup (115 g) unsalted butter, melted and slightly cooled
  • ½ cup (100 g) white sugar
  • 2 tablespoons milk
  • 1 large egg yolk
  • 2 large whole eggs
  • 1 teaspoon vanilla extract
  • 1–2 teaspoons red food coloring (adjust to desired shade)
  • ¾ cup (90 g) all-purpose flour
  • 1 teaspoon unsweetened cocoa powder
  • ¼ teaspoon salt

For the Molten Center (Ganache):

  • 50 g semi-sweet or dark chocolate, finely chopped
  • 2 tablespoons heavy whipping cream

Instructions

1. Prepare the Ganache (Molten Center):

  1. Place the chopped chocolate and whipping cream in a small, microwave-safe bowl.
  2. Heat in short intervals (15 seconds each), stirring between each, until the mixture becomes smooth and fully melted. (Alternatively, use a double boiler.)
  3. Cover the bowl and refrigerate for at least 1 hour, or until the mixture firms up enough to shape into small balls.

2. Make the Cake Batter:

  1. Preheat your oven to 200°C (400°F).
  2. Grease 4 individual ramekins with melted butter and dust them with cocoa powder or flour to prevent sticking.
  3. In a large bowl, whisk together the eggs, egg yolk, sugar, and vanilla until light, creamy, and slightly frothy.
  4. In another bowl, mix the melted butter with milk and add the red food coloring.
  5. Gently combine the colored butter mixture with the egg mixture until smooth.
  6. In a separate bowl, sift together the flour, cocoa powder, and salt.
  7. Gradually fold the dry ingredients into the wet mixture using a spatula, mixing just until combined — do not overmix.

3. Assemble and Bake:

  1. Spoon about two-thirds of the batter evenly into the prepared ramekins.
  2. Place a chilled ganache ball in the center of each mold.
  3. Cover with the remaining batter, making sure the chocolate center is sealed inside.
  4. Bake for 12–15 minutes, or until the edges are set but the center remains soft and slightly jiggly.
  5. Remove from the oven and let rest for 1–2 minutes only.
  6. Run a thin knife around the edges, then carefully invert each cake onto a serving plate.

  • Dust with powdered sugar for a simple, elegant touch.
