Sweet & Salty Chocolate-Covered Sandwich Cookies

About 24–30 cookies (depending on how much filling you use)

 

 

 

Ingredients

For the Cookie Sandwiches

1 box Ritz crackers (about 48–60 crackers)

1 cup creamy peanut butter

(You can substitute almond butter, cashew butter, or sunflower butter if needed)

1 cup powdered sugar

For the Chocolate Coating

1 cup semi-sweet chocolate chips

1 tablespoon vegetable oil (or coconut oil for smoother coating)

Optional Decorations

Holiday sprinkles

Crushed candy canes

Colored sugar

Drizzle of white chocolate

 

 

 

Instructions

1️⃣ Make the Filling

In a medium mixing bowl, add:

Peanut butter

Powdered sugar

Stir until smooth, thick, and creamy.

If mixture feels too stiff, let it sit at room temperature for a few minutes and stir again.

 

 

 

2️⃣ Assemble the Cracker Sandwiches

Lay half of the Ritz crackers flat on a baking sheet.

Spread about 1–1½ teaspoons of the peanut butter mixture on each cracker.

Top with another cracker, gently pressing to form a sandwich.

Repeat until all filling is used.

 

 

 

3️⃣ Chill

Place the cracker sandwiches in a single layer on a baking sheet.

Refrigerate for 30 minutes (or freeze for 15 minutes).

This helps them hold together during dipping.

 

 

 

4️⃣ Melt the Chocolate

Add chocolate chips and vegetable oil to a microwave-safe bowl.

Microwave in 30-second intervals, stirring after each round.

Continue until chocolate is fully melted and silky smooth.

Do not overheat.

 

 

 

5️⃣ Dip the Cookies

Remove chilled cracker sandwiches from the fridge.

Using a fork or dipping tool, dip each sandwich into the melted chocolate.

Fully coat, then lift out and gently tap to remove excess chocolate.

Place on a parchment-lined baking sheet.

 

 

 

6️⃣ Decorate

While the chocolate is still wet, add:

Sprinkles

Crushed candy canes

Colored sugar

Press lightly so decorations stick.

 

 

 

7️⃣ Set the Chocolate

Let cookies sit at room temperature for 30–45 minutes,

OR

Refrigerate for 15–20 minutes until chocolate is fully set.

 

 

 

8️⃣ Serve or Store

Serve on a festive platter

Store in an airtight container:

Room temperature: up to 5 days

Refrigerator: up to 2 weeks

Freezer: up to 2 months

✔ Use dark chocolate for richer flavor

✔ Add ½ tsp vanilla extract to the filling
