Roasted Red Pepper Hummus
This creamy hummus is packed with flavor from roasted red peppers, chickpeas, and warming spices. Perfect as a dip, spread, or healthy snack that’s gentle on your gut and great for your glow.
Ingredients:
- 2 red bell peppers, quartered
- 1 (15 oz) can chickpeas, drained and rinsed
- 2 garlic cloves (roasted with peppers)
- ½ tsp ground cumin
- ⅛ tsp cayenne pepper
- Juice of 1 lemon
- 2–3 tbsp water (adjust for desired consistency)
- Salt, to taste
- Optional garnish: chopped parsley or green onion
Directions:
1️⃣ Roast Peppers & Garlic
Place the quartered red peppers and garlic under the broiler. Roast until the skins are slightly charred, about 8–10 minutes. Keep a close eye to avoid burning.
2️⃣ Prep for Topping
Once cooled, peel off the skins. Chop about 2 tablespoons of roasted pepper to set aside for garnish.
3️⃣ Blend Hummus
In a blender or food processor, combine chickpeas, roasted garlic, remaining roasted peppers, cumin, cayenne, lemon juice, and salt. Blend until smooth.
4️⃣ Adjust Consistency
Add water, one tablespoon at a time, until creamy and smooth. Soft chickpeas may need less.
5️⃣ Serve & Garnish
Spoon into a serving bowl, top with reserved roasted peppers, and sprinkle with parsley or green onion. Chill before serving if desired.
