Root Beer Baked Beans
Ingredients
- 3 slices bacon, chopped
- 1 small onion, diced
- 2 cans (16 oz each) pork and beans, undrained
- ½ cup root beer (regular, not diet)
- ½ cup barbecue sauce
- ¼ cup packed brown sugar
- 1 teaspoon dry mustard (or Dijon mustard)
- ½ teaspoon black pepper
Instructions
1. Preheat the Oven
Set your oven to 400°F (200°C).
Lightly grease a 2-quart baking or casserole dish.
2. Cook the Bacon and Onion
In a skillet over medium heat, cook the chopped bacon until crispy.
Add the diced onion to the skillet and sauté for 3–5 minutes, until softened and translucent.
Remove from heat—keep the bacon grease for added flavor.
3. Mix the Ingredients
In a large mixing bowl, combine:
- Cooked bacon and onions (with the drippings)
- Pork and beans
- Root beer
- Barbecue sauce
- Brown sugar
- Dry mustard
- Black pepper
Stir gently until everything is well blended.
4. Bake
Pour the mixture into the prepared baking dish.
Bake uncovered for 45–55 minutes, or until the sauce becomes thick, sticky, and bubbly.
5. Serve
Let the baked beans cool for about 10 minutes—the sauce will continue to thicken as it rests.
Serve warm alongside BBQ, grilled meats, or burgers.
