Garden Glow Spaghetti

Ingredients (Serves 4)

Pasta Base

12 oz (340 g) spaghetti (classic or whole wheat)

Water for boiling

1½ tbsp salt (for pasta water)

Garden Sauté

3 tbsp extra-virgin olive oil

4 cloves garlic, finely minced

1 small onion, thinly sliced (optional but recommended)

1½ cups green beans, trimmed & cut into 1-inch pieces

2 cups cherry tomatoes, halved

Fresh Finish

½ cup fresh basil or parsley, chopped (or mix of both)

½ tsp freshly ground black pepper

Salt to taste

Optional Flavor Boosters

¼–½ tsp red chili flakes

Zest of ½ lemon (for brightness)

2 tbsp pasta cooking water (for silky sauce)

Optional Toppings

Grated Parmesan or Pecorino cheese

Toasted pine nuts or almonds

Step-by-Step Instructions

1️⃣ Cook the Spaghetti

Bring a large pot of water to a rolling boil.

Add salt generously (the water should taste like the sea).

Add spaghetti and cook until al dente (about 9–11 minutes).

Reserve ½ cup pasta water, then drain the pasta and set aside.

2️⃣ Build the Garden Base

Heat olive oil in a large skillet over medium heat.

Add sliced onion and sauté for 2–3 minutes until soft and translucent.

Stir in garlic and cook 30 seconds, just until fragrant (don’t let it burn).

Add green beans and sauté 4–5 minutes, until tender but still vibrant.

3️⃣ Add Tomatoes & Herbs

Toss in cherry tomatoes and chili flakes (if using).

Cook 2–3 minutes, until tomatoes soften and release juices.

Season lightly with salt and black pepper.

Stir in half of the fresh herbs.

4️⃣ Bring It All Together

Add cooked spaghetti directly to the skillet.

Toss gently to coat with the olive oil and veggie juices.

Splash in reserved pasta water a little at a time to create a light, glossy sauce.

Taste and adjust seasoning.

 

 

 

5️⃣ Serve with Love

Remove from heat.

Sprinkle remaining fresh herbs on top.

Finish with lemon zest, cheese, or nuts if desired.
