Southern-Style Honey Butter Cornbread Poppers
Ingredients
Dry Ingredients
- 1 cup yellow cornmeal
- 1/2 cup all-purpose flour
- 1/4 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Wet Ingredients
- 1 cup buttermilk (or 1 cup milk + 1 Tbsp lemon juice, rested 5 min)
- 1 large egg
- 1/4 cup melted butter
Honey Butter Glaze
- 3 tablespoons butter
- 2 tablespoons honey
- 1/2 teaspoon vanilla extract (optional)
Instructions
1. Prepare the batter
- Preheat your oven to 400°F (200°C).
- Lightly grease a mini muffin pan.
- In a bowl, whisk together the cornmeal, flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk the buttermilk, egg, and melted butter.
- Pour the wet ingredients into the dry ingredients and mix gently until combined. Do not overmix—just until everything comes together.
2. Bake the poppers
- Spoon the batter into the mini muffin cups, filling each about 2/3 full.
- Bake for 10–12 minutes, or until the tops are lightly golden and a toothpick comes out clean.
3. Make the honey butter glaze
- In a small saucepan or microwave-safe bowl, melt the butter.
- Stir in the honey and vanilla.
4. Finish & serve
- Brush the warm cornbread poppers generously with the honey-butter glaze.
- Serve warm for the best flavor!
