Southern-Style Honey Butter Cornbread Poppers

Ingredients

Dry Ingredients

  • 1 cup yellow cornmeal
  • 1/2 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Wet Ingredients

  • 1 cup buttermilk (or 1 cup milk + 1 Tbsp lemon juice, rested 5 min)
  • 1 large egg
  • 1/4 cup melted butter

Honey Butter Glaze

  • 3 tablespoons butter
  • 2 tablespoons honey
  • 1/2 teaspoon vanilla extract (optional)

Instructions

1. Prepare the batter

  1. Preheat your oven to 400°F (200°C).
  2. Lightly grease a mini muffin pan.
  3. In a bowl, whisk together the cornmeal, flour, sugar, baking powder, baking soda, and salt.
  4. In a separate bowl, whisk the buttermilk, egg, and melted butter.
  5. Pour the wet ingredients into the dry ingredients and mix gently until combined. Do not overmix—just until everything comes together.

2. Bake the poppers

  1. Spoon the batter into the mini muffin cups, filling each about 2/3 full.
  2. Bake for 10–12 minutes, or until the tops are lightly golden and a toothpick comes out clean.

3. Make the honey butter glaze

  1. In a small saucepan or microwave-safe bowl, melt the butter.
  2. Stir in the honey and vanilla.

4. Finish & serve

  1. Brush the warm cornbread poppers generously with the honey-butter glaze.
  2. Serve warm for the best flavor!
