Taco Pasta Salad — Don’t Miss This
Ingredients:
1 lb ground beef, cooked and drained
1 lb rotini pasta, cooked and chilled
1 oz taco seasoning
1 small yellow onion, finely chopped
1 pint grape tomatoes, halved
2 cups shredded cheddar-jack cheese
3 cups shredded iceberg lettuce
1½ cups French dressing
9¾ oz bag of Nacho Doritos, crushed
Instructions:
1. Cook the beef: In a skillet, brown the ground beef, drain excess fat, then stir in the taco seasoning until well coated.
2. Prepare the pasta: Boil the rotini until just al dente. Drain, rinse under cold water, and set aside to cool.
3. Chop the veggies and cheese: Dice the onion, halve the grape tomatoes, shred the lettuce, and grate the cheddar-jack cheese.
4. Combine ingredients: In a large mixing bowl, gently fold together the cooked beef, pasta, vegetables, and shredded cheese.
5. Dress it: Pour in the French dressing and toss everything until evenly coated.
6. Add crunch: Fold in the crushed Doritos for added texture and flavor.
7. Serve: This salad is ready to enjoy immediately — optionally top with extra cheese, chopped cilantro, or a dollop of sour cream if desired.
