Tea Cookies

My nanny and my mother used to make these cookies quite often because the ingredients were simple and always available in their pantry. These delightful cookies bring back wonderful childhood memories.

 

 

Ingredients

  • 1 cup butter, softened
  • 1 ½ cups sugar
  • 3 large eggs, at room temperature
  • 1 tablespoon vanilla extract
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon salt

 

Directions

  1. Preheat the oven to 375°F (190°C).
  2. In a large mixing bowl, cream together the butter and sugar until light and fluffy, about 5–7 minutes.
  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, combine the flour, baking powder, and salt. Gradually add this mixture to the creamed butter mixture. (The dough will be soft.)
  5. Drop the dough by rounded tablespoonfuls onto greased baking sheets, spacing them apart.
  6. Bake for 7–8 minutes, or until the edges are lightly golden.
  7. Remove the cookies from the baking sheets and cool on wire racks.

Light, buttery, and perfectly sweet, these tea cookies are wonderful on their own or served with a warm cup of tea.
