Ingredients

Blackened Salmon

  • 4 salmon fillets (about 6 oz / 170 g each), skin removed
  • 2 tablespoons olive oil

Blackening Seasoning

  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ¼–½ teaspoon cayenne pepper (adjust to heat preference)
  • ¾ teaspoon salt
  • ½ teaspoon black pepper

Lobster Butter Sauce

  • 6 tablespoons unsalted butter
  • ½ cup cooked lobster meat, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • Pinch of cayenne pepper (optional)
  • Sea salt, to taste
  • 1 tablespoon fresh parsley, finely chopped

Directions

Step 1: Season the Salmon

Pat the salmon fillets dry with paper towels.
In a small bowl, combine paprika, garlic powder, onion powder, thyme, oregano, cayenne, salt, and black pepper.
Rub the seasoning generously over all sides of each salmon fillet.

Step 2: Sear the Salmon

Heat olive oil in a large skillet over medium-high heat until shimmering.
Place salmon fillets in the pan and cook 3–4 minutes without moving until a deep, dark crust forms.

Step 3: Flip & Finish

Flip the salmon and cook another 3–4 minutes, or until cooked through and flaky.
(Recommended internal temperature: 145°F / 63°C.)
Remove from heat and set aside.

Step 4: Make the Lobster Butter

In a small saucepan over low heat, melt the butter.
Add minced garlic and cook 1–2 minutes, stirring gently until fragrant (do not brown).

Step 5: Add Lobster & Flavor

Stir in chopped lobster meat, lemon juice, lemon zest, cayenne (if using), sea salt, and parsley.
Remove from heat and keep warm.

Step 6: Serve

Plate the blackened salmon and spoon the warm lobster butter generously over the top.
Serve immediately with sides like sweet potato mash, garlic vegetables, or creamy mac and cheese.
