Tender, juicy chicken breasts are seared to golden perfection, then topped with caramelized onions, sautéed mushrooms, and a creamy homemade gravy—all finished with a blanket of melted cheese. Ingredients

4 boneless, skinless chicken breasts

1 tsp garlic powder

1 tsp paprika

Salt, to taste

Black pepper, to taste

2 tbsp olive oil

2 tbsp butter

1 medium onion, thinly sliced

1 cup mushrooms, sliced

2 tbsp all-purpose flour

1½ cups chicken broth

4 slices provolone or mozzarella cheese

Instructions

1. Preheat the Oven:
Set your oven to 375°F (190°C).

2. Season the Chicken:
Sprinkle both sides of each chicken breast with garlic powder, paprika, salt, and pepper. Gently press the seasoning into the meat for maximum flavor.

3. Sear the Chicken:
Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 4–5 minutes per side, until golden brown. (It doesn’t need to be fully cooked yet.) Transfer to a plate and set aside.

4. Make the Gravy Base:
In the same skillet, melt the butter. Add the onions and mushrooms, cooking for 8–10 minutes until they soften and begin to caramelize.

5. Thicken the Sauce:
Sprinkle the flour over the onion-mushroom mixture and stir well. Cook for 1 minute to eliminate the raw flour taste.

6. Add the Broth:
Slowly pour in the chicken broth, whisking constantly until the mixture turns into a smooth, thickened gravy.

7. Assemble & Bake:
Place the seared chicken breasts in a baking dish. Spoon the onion-mushroom gravy evenly over each piece, then top with a slice of cheese.

8. Bake to Perfection:
Cover with foil and bake for 20–25 minutes, until the chicken is fully cooked (internal temperature around 165°F / 74°C) and the cheese has melted.
Optional: Remove foil in the last 5 minutes and broil briefly for beautifully browned cheese edges.

9. Serve & Enjoy:
Let the chicken rest for a few minutes before serving. Spoon any leftover gravy over the top and serve warm.
