Coconut Moonshine 

Coconut Moonshine

 

Ingredients:

4 cups Everclear or other high-proof spirit (at least 100 proof)

1 cup coconut rum

2 cups sweetened, flaked coconut

4 tsp corn syrup

6 tsp vanilla extract

4 mason jars with lids

Cheesecloth or fine mesh strainer

 

 

 

Instructions:

Divide ingredients Evenly distribute the coconut flakes, corn syrup, and vanilla extract among the four mason jars.

Add spirits Pour 1/4 cup of coconut rum into each jar.

Top off Fill each jar the rest of the way with Everclear.

Infuse Seal the jars tightly and place them in a cool, dark place for four weeks.

Shake daily Shake the jars every two days to aid the infusion process.

 

 

 

Strain After four weeks, strain the liquid through a cheesecloth or fine mesh strainer to remove the coconut flakes and any solids. You may need to strain it multiple times to achieve clarity, similar to making coconut-infused rum.

Store Pour the finished coconut moonshine back into clean mason jars and seal them. Store in the refrigerator for up to 30 days.

 

 

Serving Suggestions

Chilled: Enjoy it on its own as a chilled shot or sipper.

Cocktails: Mix with pineapple juice for a tropical cocktail.
