The Softest Cake in the World

It melts in your mouth — light, moist, and full of flavor!

Ingredients:

  • 3 large eggs
  • 1 pinch of salt
  • 8g vanilla sugar (or 1 tsp vanilla extract)
  • 100ml warm milk
  • 1 tablespoon instant coffee (dissolved in the milk)
  • 180g all-purpose flour
  • 20g unsweetened cocoa powder
  • 15g baking powder (about 1 tbsp)
  • 150g granulated sugar
  • 100ml vegetable oil (sunflower or canola)

Optional for Extra Softness:

  • 2 tbsp plain yogurt or sour cream
  • Powdered sugar or melted chocolate for topping

Instructions:

  1. Preheat your oven to 170°C (340°F). Grease and line a baking pan (about 22–24 cm).
  2. In a large bowl, beat the eggs, sugar, vanilla sugar, and salt until pale and fluffy (about 3–4 minutes).
  3. Add the oil and warm milk (mixed with coffee), and whisk again until smooth.
  4. Sift together flour, cocoa powder, and baking powder. Gradually fold into the wet ingredients using a spatula.
  5. Mix gently until the batter is smooth and lump-free. Don’t overmix!
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool completely, then dust with powdered sugar or drizzle with melted chocolate.

Serving Tip:

Perfect with a cup of coffee or milk — it’s so soft it almost disappears in your mouth!
