Cheesy Stuffed Meatloaf Bites
Ingredients
→ Main:
450 grams ground beef
60 grams breadcrumbs
60 milliliters whole milk
1 large egg
1 small onion, finely chopped
2 cloves garlic, minced
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon Worcestershire sauce
½ teaspoon dried oregano (optional)
→ Filling:
100 grams mozzarella cheese, cut into small cubes (or use cheddar for a stronger flavor)
→ Topping (optional):
½ cup ketchup
1 tablespoon brown sugar
1 teaspoon mustard
Instructions
1. Preheat the oven:
Set your oven to 190°C (375°F) and lightly grease a mini muffin tin or line a baking tray with parchment paper.
2. Prepare the meat mixture:
In a large bowl, combine ground beef, breadcrumbs, milk, egg, onion, garlic, salt, pepper, Worcestershire sauce, and oregano. Mix gently until all ingredients are evenly incorporated—avoid overmixing to keep the meatloaf tender.
3. Form the bites:
Take about a tablespoon of the meat mixture and flatten it slightly in your palm. Place a cube of mozzarella in the center, then fold the meat around it to seal, shaping it into a small ball. Repeat until all the mixture is used.
4. Add the topping (optional):
In a small bowl, whisk together ketchup, brown sugar, and mustard. Brush a little over each meatloaf bite.
5. Bake:
Arrange the bites on the prepared tray and bake for 18–22 minutes, or until cooked through and golden brown.
6. Serve:
Allow them to cool slightly before serving. Enjoy them warm with dipping sauces like BBQ, ranch, or marinara.
