Tropical Carrot Coconut Bread

 

 

 

Ingredients:

 

– 1 cup  shredded carrots

– 2  eggs

– 1/2 cup  applesauce

– 1 tsp  vanilla extract

– 1/2 cup  shredded coconut

– 1/3 cup  raisins

– 1/3 cup  chopped pecans

– 1 cup  flour

– 1 tsp  baking powder

– 1/2 tsp  baking soda

– 1/2 tsp  cinnamon

– Pinch of  salt

 

 

 

 

Instructions:

 

1. Preheat oven to 175°C (350°F)

2. Mix wet ingredients: eggs, applesauce, vanilla

3. Add carrots, coconut, raisins, pecans

4. In another bowl, combine dry ingredients

5. Fold dry into wet until just combined

6. Pour into lined pan, sprinkle coconut on top

7. Bake 35–40 min until golden & fragrant

8. Cool, slice, and serve with love
