Ingredients

1 large ripe mango, diced (≈ 1.5 cups / 250g)

1 ripe avocado, diced (≈ 150g)

1 can (15 oz / 425g) black beans, rinsed and drained

1 cup corn kernels (fresh or thawed frozen, ≈ 150g)

1/2 medium red bell pepper, finely diced (≈ 90g)

1/4 cup red onion, finely diced (≈ 30g)

1/4 cup fresh cilantro, chopped (≈ 10g)

For the Dressing

3 tbsp fresh lime juice (≈ 45ml)

2 tbsp olive oil (≈ 30ml)

1/2 tsp ground cumin (≈ 1g)

1/4 tsp salt (≈ 1g)

Pinch of black pepper (≈ 0.2g)

1. Prep the ingredients: Dice the mango and avocado. Rinse and drain the black beans. Prepare the corn—either raw or lightly blanched. Finely chop the bell pepper, red onion, and cilantro.

2. Mix the salad: In a large bowl, combine the mango, avocado, black beans, corn, bell pepper, red onion, and cilantro.

3. Whisk the dressing: In a small bowl, whisk together lime juice, olive oil, cumin, salt, and black pepper until fully blended.

4. Toss & coat: Pour the dressing over the salad and gently toss to combine, keeping the avocado chunks intact.
