Ingredients
For the Crust:
- 1 cup Graham crackers, crushed
- 3 tablespoons unsalted butter, melted
For the Cheesecake Filling:
- 1 package (8 oz) cream cheese, softened
- 1/4 cup granulated sugar
- 1/2 teaspoon vanilla extract
- 1/2 cup white chocolate chips, melted
- 1/2 cup fresh strawberries, finely chopped
For Topping:
- Additional strawberries, sliced
- Extra melted white chocolate for drizzling
Instructions
1. Prepare the Crust:
- In a mixing bowl, combine the crushed Graham crackers and melted butter until the mixture resembles wet sand.
- Press the mixture firmly into the bottom of a silicone mini muffin pan to form the base for each cheesecake bite.
2. Make the Cheesecake Filling:
- In a separate bowl, beat together the cream cheese, sugar, and vanilla extract until smooth and creamy.
- Gently fold in the melted white chocolate until fully incorporated.
- Stir in the finely chopped strawberries.
3. Assemble and Chill:
- Spoon the cheesecake mixture over the Graham cracker bases in the mini muffin pan, filling each cup to the top.
- Refrigerate for at least 2 hours, or until the cheesecake bites are fully set.
4. Finish and Serve:
- Carefully remove the cheesecake bites from the silicone pan.
- Top each bite with a small piece of fresh strawberry and a drizzle of melted white chocolate before serving.
