Coconut Gumdrop Holiday Snowball Cookies

Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar, plus extra for rolling
  • 1 tsp vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/4 tsp salt
  • 1 cup sweetened shredded coconut
  • 1/2 cup chopped gumdrops (avoid black licorice for better color)
  • 1/2 cup chopped walnuts (optional)

Instructions

1. Preheat the Oven
Preheat your oven to 350°F (175°C).
Line baking sheets with parchment paper or silicone baking mats.

2. Cream the Butter and Sugar
In a large mixing bowl, beat the softened butter, powdered sugar, and vanilla until light and fluffy (about 2 minutes).

3. Prepare the Dough
Add the flour and salt gradually, mixing on low speed until a soft dough forms.
Stir in the shredded coconut, chopped gumdrops, and walnuts (if using) until evenly combined.

4. Shape the Cookies
Scoop about 1 tablespoon of dough and roll into 1-inch balls.
Place them on the prepared baking sheets, spaced about 1 inch apart (they won’t spread much).

5. Bake
Bake for 12–15 minutes.
The bottoms should be lightly golden while the tops remain pale. Avoid overbaking.

6. First Powdered Sugar Coating
Let the cookies cool on the baking sheet for 5 minutes—warm but firm enough to handle.
Roll each cookie in powdered sugar to coat well.
Transfer to a wire rack to cool completely.

 

 

 

7. Second Coating
Once fully cooled, roll the cookies in powdered sugar again.
This second coating gives them the classic snowy, white “snowball” finish.
