Flaky, buttery puff pastry filled with a creamy blend of spinach, ricotta, and Parmesan cheese, then baked until beautifully golden and crisp. Ingredients
2 sheets puff pastry, thawed
2 cups fresh spinach, chopped
1 cup ricotta cheese
½ cup grated Parmesan cheese
1 egg, beaten (for egg wash)
1 teaspoon garlic powder
Salt and black pepper, to taste
1 tablespoon olive oil
Instructions
1. Preheat the Oven
Preheat your oven to 400°F (200°C).
Line a baking sheet with parchment paper.
2. Prepare the Filling
Heat the olive oil in a skillet over medium heat.
Add the chopped spinach and cook for 2–3 minutes until wilted.
Remove from heat and allow it to cool slightly.
In a mixing bowl, combine the spinach, ricotta cheese, Parmesan cheese, garlic powder, salt, and pepper. Mix until smooth and well combined.
3. Prepare the Pastry
Roll out the puff pastry sheets on a lightly floured surface.
Cut each sheet into 4 equal squares, creating 8 squares total.
4. Fill and Fold
Spoon a generous amount of the spinach mixture into the center of each square.
Fold each pastry over to form a triangle or rectangle.
Press the edges firmly with a fork to seal.
5. Add the Egg Wash
Place the pastries on the prepared baking sheet.
Brush the tops with the beaten egg for a shiny, golden finish.
Cut a small slit on top of each pastry to allow steam to escape.
6. Bake
Bake for 18–22 minutes, or until the pastries are puffed and golden brown.
7. Serve
Let the pastries cool for a few minutes before serving.
