Ingredients
For the Bread Boat
1 large loaf of crusty French bread or a wide baguette
For the Creamy Spinach Filling
10 oz (280 g) frozen spinach, thawed and squeezed completely dry (or 10 oz fresh spinach, wilted and drained)
8 oz (225 g) cream cheese, softened
⅓ cup sour cream or mayonnaise
3 cloves garlic, minced
1½ cups shredded mozzarella cheese, divided
½ cup grated Parmesan cheese
½ tsp salt
¼ tsp black pepper
¼ tsp crushed red pepper flakes (optional)
1 tbsp fresh chives or parsley, chopped
Instructions
Prepare the Bread
Preheat your oven to 375°F (190°C).
Slice the French bread lengthwise.
Carefully hollow out some of the soft interior, leaving about a ½-inch border around the edges to create a sturdy bread boat.
Make the Spinach Dip Filling
In a large mixing bowl, combine the cream cheese, sour cream, garlic, salt, pepper, and red pepper flakes.
Stir until smooth and creamy.
Fold in the drained spinach, Parmesan cheese, and 1 cup of the mozzarella cheese.
Fill the Bread Boat
Spread the spinach mixture evenly into the hollowed bread.
Sprinkle the remaining ½ cup mozzarella cheese generously over the top.
Bake
Place the stuffed bread on a baking sheet.
Bake for 18–22 minutes, or until the cheese is melted and bubbly.
For a golden, lightly browned top, broil for an additional 1–2 minutes.
Serve
Remove from the oven and let cool for 5 minutes.
Garnish with fresh chives or parsley.
Slice into portions and serve warm.
Tips for Extra Flavor
Add cooked bacon bits for a smoky twist.
Mix in chopped artichoke hearts for a spinach-artichoke version.
Substitute Monterey Jack or provolone cheese for a different cheesy flavor.
Brush the bread edges with garlic butter before baking for an extra-crispy finish.
