Ingredients

1½ lbs (680 g) sirloin steak or ribeye, cut into bite-sized cubes

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon smoked paprika

1 tablespoon cornstarch (optional, for extra crispiness)

2 tablespoons olive oil

4 tablespoons unsalted butter

6 cloves garlic, minced

1 teaspoon Italian seasoning

1 tablespoon fresh parsley, finely chopped

½ teaspoon red pepper flakes (optional)

Fresh lemon wedges, for serving

Instructions

1. Season the Beef

Pat the beef cubes dry with paper towels. In a bowl, toss them with salt, pepper, smoked paprika, and cornstarch until evenly coated.

2. Sear Until Crispy

Heat the olive oil in a large skillet over medium-high heat. Add the beef in a single layer, working in batches if necessary. Sear for 2–3 minutes per side until a deep golden-brown crust forms and the beef is cooked to your preferred doneness.

3. Make the Garlic Butter

Reduce the heat to medium. Add the butter to the skillet and let it melt. Stir in the minced garlic, Italian seasoning, and red pepper flakes. Cook for 30–60 seconds until fragrant.

4. Coat the Beef

Return all the beef bites to the skillet and toss them in the garlic butter sauce until every piece is glossy and well coated.

5. Finish and Serve

Sprinkle with fresh parsley and serve immediately with lemon wedges for a bright, fresh finish.
