Ingredients

4 potatoes, peeled and diced

1 small head broccoli, cut into florets

1 small head cauliflower, cut into florets

2 teaspoons salt, divided

1 onion, finely chopped

1 carrot, grated

2 cloves garlic, minced

1 red bell pepper, diced

2 small green peppers, diced

A handful of cherry tomatoes, halved

4 eggs

3 tablespoons olive oil

½ teaspoon black pepper

½ teaspoon paprika

1 teaspoon dried oregano or Italian seasoning

1 cup shredded cheese (mozzarella, cheddar, or your favorite blend)

 

 

 

 

Instructions

Preheat your oven to 190°C (375°F) and lightly grease a baking dish.

Bring a large pot of salted water to a boil. Add the potatoes and cook for 8–10 minutes until slightly tender. Add the broccoli and cauliflower florets during the last 3 minutes of cooking. Drain well and set aside.

Heat the olive oil in a large skillet over medium heat. Sauté the onion until soft and translucent. Add the garlic and cook for 30 seconds until fragrant.

Stir in the grated carrot, red pepper, and green peppers. Cook for 4–5 minutes until the vegetables soften slightly.

Add the cherry tomatoes and cook for another 2 minutes. Season with the remaining salt, black pepper, paprika, and oregano.

In a large mixing bowl, whisk the eggs until smooth. Add the cooked potatoes, broccoli, cauliflower, and sautéed vegetables. Mix gently to combine.

Transfer the mixture to the prepared baking dish and spread evenly. Sprinkle the shredded cheese generously over the top.

Bake for 25–30 minutes, or until the casserole is golden, bubbly, and fully set in the center.

Let it cool for a few minutes before slicing and serving.
