Ingredients

800 g (28.5 oz) milk

Zest of 1 lemon

10 g (0.35 oz) vanilla sugar

3 large eggs

80 g (⅔ cup) sugar

40 g (⅓ cup) cornstarch

Fresh lemon slices or mint leaves, for garnish (optional)

Instructions

Pour the milk into a saucepan and add the lemon zest and vanilla sugar. Heat gently over medium heat until warm, but do not boil.

In a separate bowl, whisk together the eggs, sugar, and cornstarch until smooth and lump-free.

Slowly pour a little of the warm milk into the egg mixture while whisking continuously to temper the eggs.

Return the mixture to the saucepan and cook over medium-low heat, stirring constantly, until it thickens into a smooth, creamy custard.

Remove from the heat and strain if desired for an extra silky texture.

Pour into serving glasses or dessert bowls and allow to cool slightly.
