Keto Blueberry Donuts – Soft, Fluffy & Bursting with Fresh Blueberries

Just made these Keto Blueberry Donuts… and WOW!  They’re honestly better than any bakery donut I’ve ever tasted. Soft, moist, perfectly sweet, and packed with juicy blueberries, these low-carb treats are everything you crave without the sugar. Ingredients

For the Donuts:

2 cups almond flour

1/4 cup coconut flour

1/2 cup granulated keto sweetener (erythritol or monk fruit)

2 teaspoons baking powder

1/4 teaspoon salt

3 large eggs

1/3 cup unsweetened almond milk

1/4 cup melted butter or coconut oil

1 teaspoon vanilla extract

1 teaspoon lemon zest (optional, for extra flavor)

3/4 cup fresh or frozen blueberries

For the Glaze (Optional):

1/2 cup powdered keto sweetener

1–2 tablespoons heavy cream or unsweetened almond milk

1/2 teaspoon vanilla extract

 

 

 

 

Instructions

Preheat your oven to 350°F (175°C) and lightly grease a donut pan.

In a large bowl, whisk together the almond flour, coconut flour, sweetener, baking powder, and salt.

In another bowl, beat the eggs, then add the almond milk, melted butter, vanilla, and lemon zest.

Pour the wet ingredients into the dry ingredients and stir until combined.

Gently fold in the blueberries, being careful not to crush them.

Spoon or pipe the batter into the prepared donut pan, filling each cavity about 3/4 full.

Bake for 18–22 minutes, or until the tops are lightly golden and a toothpick inserted comes out clean.

Let the donuts cool in the pan for 5 minutes before transferring them to a wire rack.

If using the glaze, whisk the ingredients together and drizzle over the cooled donuts.

Tips

Fresh blueberries give the best texture, but frozen work well too—don’t thaw them first.

Add a pinch of cinnamon for a warm, bakery-style flavor.

Store in an airtight container for up to 4 days, or freeze for up to 2 months.
