High-Protein Broccoli Cheddar Soup – Creamy Comfort in Every Spoonful

Ingredients

1 tablespoon butter

1 large yellow onion, diced

2 large carrots, peeled and diced

1 celery stalk, diced

2 garlic cloves, minced

1/4 cup all-purpose flour (or gluten-free flour)

1/2 teaspoon smoked paprika

3 cups vegetable broth (a “not chicken” style vegetable broth works great)

4 cups broccoli florets, chopped

2 cups low-fat milk

1 cup plain Greek yogurt

2 cups sharp cheddar cheese, freshly shredded

2 cups cooked shredded chicken (or white beans for a vegetarian version)

Salt and black pepper, to taste

Optional: pinch of cayenne pepper for a little heat

 

 

 

 

Instructions

Melt the butter in a large pot over medium heat. Add the onion, carrots, and celery, and cook for 6–8 minutes until softened.

Stir in the garlic and smoked paprika, cooking for about 30 seconds until fragrant.

Sprinkle the flour over the vegetables and stir constantly for 1–2 minutes.

Slowly whisk in the vegetable broth until smooth, then bring to a gentle simmer.

Add the chopped broccoli and cook for 10–12 minutes, or until tender.

Stir in the milk and cooked chicken, then simmer for another 5 minutes.

Reduce the heat to low. Stir in the Greek yogurt until fully combined.

Gradually add the shredded cheddar cheese, stirring until melted and creamy.

Season with salt, black pepper, and cayenne if desired. Blend part of the soup with an immersion blender for a thicker texture, or leave it chunky.

Serve hot with crusty bread, crackers, or a fresh side salad.

Freshly shredded cheese melts more smoothly than pre-shredded cheese.

Add extra broccoli for even more fiber and nutrients.
