Melt-in-Your-Mouth Slow Cooker Pot Roast with Potatoes & Green Beans

 

 

 

 

Nothing beats coming home to the comforting aroma of a slow-cooked pot roast that’s been simmering all day. This hearty one-pot meal features tender beef, buttery potatoes, sweet onions, and crisp green beans, all cooked in a rich, flavorful broth. It’s the perfect family dinner for busy weekdays, chilly evenings, or a cozy Sunday meal.

 

Ingredients

 

– 3–4 lb beef chuck roast

– 2 tbsp olive oil

– 1½ tsp salt

– 1 tsp black pepper

– 1 tsp garlic powder

– 1 tsp onion powder

– 1 tsp smoked paprika

– 1 tsp dried thyme

– 1 tsp dried rosemary

– 1 large onion, sliced

– 4 garlic cloves, minced

– 1½ lbs baby potatoes (or Yukon Gold potatoes, halved)

– 2 cups beef broth

– 1 tbsp Worcestershire sauce

– 1 tbsp tomato paste (optional, for extra richness)

– 1 lb fresh green beans, trimmed

– 2 tbsp cornstarch + 2 tbsp cold water (optional, for thickening the gravy)

– Fresh parsley, chopped, for garnish

 

 

 

 

 

Instructions

 

1. Season the chuck roast with salt, pepper, garlic powder, onion powder, smoked paprika, thyme, and rosemary.

2. Heat olive oil in a skillet over medium-high heat and sear the roast for 2–3 minutes per side until beautifully browned.

3. Place the sliced onions and potatoes in the bottom of the slow cooker.

4. Set the roast on top, then add the minced garlic.

5. Pour in the beef broth, Worcestershire sauce, and tomato paste.

6. Cover and cook on LOW for 8–9 hours or HIGH for 5–6 hours, until the beef is fork-tender.

7. During the last 45 minutes of cooking, add the green beans. Cover and continue cooking until tender.

8. For a thicker gravy, remove the roast and vegetables. Stir the cornstarch slurry into the cooking liquid and cook on HIGH for 10–15 minutes until thickened.

9. Slice or shred the beef and serve with the potatoes, green beans, and plenty of rich gravy. Garnish with fresh parsley.
