2 white fish fillets (cod, halibut, sea bass, or haddock)

1 cup cherry tomatoes, halved

¼ cup Kalamata olives, pitted and sliced

2 tablespoons extra virgin olive oil

2 cloves garlic, minced

1 tablespoon fresh parsley, chopped

1 teaspoon dried oregano

½ teaspoon paprika

½ teaspoon sea salt

¼ teaspoon black pepper

Juice of ½ lemon

Lemon slices, for garnish

Instructions

Preheat your oven to 400°F (200°C) and lightly grease a baking dish.

Arrange the fish fillets in the prepared baking dish.

In a bowl, combine the cherry tomatoes, olives, garlic, olive oil, oregano, paprika, salt, pepper, and lemon juice.

Spoon the tomato mixture evenly around and over the fish.
