Ingredients
For the Beef & Vegetables
2½–3 lbs beef chuck roast, cut into large chunks
1½ lbs baby potatoes, halved if large
1 large sweet onion, sliced
3 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon paprika
1 teaspoon dried thyme
1 teaspoon dried rosemary
For the Gravy
2 cups beef broth
2 tablespoons Worcestershire sauce
1 tablespoon tomato paste
1 tablespoon cornstarch
2 tablespoons cold water
Instructions
Season the Beef
Pat the beef dry and season with salt, pepper, paprika, thyme, and rosemary.
Sear for Extra Flavor
Heat olive oil in a skillet over medium-high heat.
Sear the beef on all sides until browned, about 2–3 minutes per side.
Layer the Slow Cooker
Place the potatoes, onions, and garlic in the bottom of the slow cooker.
Arrange the browned beef on top.
Prepare the Cooking Liquid
In a bowl, whisk together the beef broth, Worcestershire sauce, and tomato paste.
Pour over the beef and vegetables.
Slow Cook

Make the Gravy
Remove 1 cup of cooking liquid from the slow cooker.
Mix cornstarch and cold water to create a slurry.
Stir into the hot liquid and cook for a few minutes until thickened.
Return the gravy to the slow cooker and gently mix.
