Ingredients:
2 lbs (900 g) beef stew meat or chuck roast, cut into cubes
8 oz (225 g) mushrooms, sliced
1 medium onion, sliced
4 garlic cloves, minced
2 cups beef broth
1 tbsp Worcestershire sauce
1 tsp Dijon mustard (optional)
1 tsp onion powder
1 tsp garlic powder
1 tsp dried thyme
½ tsp paprika
Salt and black pepper, to taste
1 cup heavy cream
4 oz (115 g) cream cheese, softened
2 tbsp cornstarch + 2 tbsp water (optional, for a thicker sauce)
Fresh parsley, chopped, for garnish
Instructions:
Place the beef, mushrooms, onions, and garlic into the slow cooker.
Pour in the beef broth and Worcestershire sauce, then season with onion powder, garlic powder, thyme, paprika, salt, and pepper. Stir gently to combine.
Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until the beef is fork-tender.
About 30 minutes before serving, whisk together the heavy cream and cream cheese until smooth, then stir into the slow cooker.
If you’d like a thicker sauce, mix the cornstarch with water and stir it in. Cover and cook for another 20–30 minutes until the sauce is rich and creamy.
Garnish with fresh parsley and serve hot over buttered egg noodles, creamy mashed potatoes, steamed rice, or with crusty bread.
Creamy, savory, and incredibly comforting—this slow cooker favorite is the kind of meal that brings everyone back to the table for seconds!
