Ingredients
2 lbs (900 g) beef chuck, cut into bite-sized cubes
4 medium potatoes, peeled and diced
4 carrots, sliced
1 large onion, chopped
3 cloves garlic, minced
3 cups beef broth
2 tbsp tomato paste
2 tbsp Worcestershire sauce
2 tbsp cornstarch
2 tbsp water
1 tsp salt
1 tsp black pepper
1 tsp paprika
1 tsp dried thyme
1 tsp dried rosemary
2 bay leaves
Instructions
Add the beef, potatoes, carrots, onion, and garlic to the slow cooker.
In a bowl, whisk together the beef broth, tomato paste, Worcestershire sauce, salt, pepper, paprika, thyme, and rosemary. Pour over the ingredients.
Add the bay leaves, cover, and cook on LOW for 8–9 hours or HIGH for 4–5 hours, until the beef is tender.
Mix the cornstarch with the water to make a slurry, then stir it into the stew during the last 20–30 minutes of cooking to thicken the gravy.
Remove the bay leaves, stir well, and serve hot with crusty bread, biscuits, or mashed potatoes.
