Ingredients
2½–3 lbs (1.1–1.4 kg) Yukon Gold or Russet potatoes, peeled and thinly sliced
2 cups shredded sharp cheddar cheese
½ cup grated Parmesan cheese
2 cups heavy cream
1 cup whole milk
3 tablespoons unsalted butter, melted
3 cloves garlic, minced
1 teaspoon onion powder
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon paprika (optional)
1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
Cooking spray or butter for greasing the slow cooker
Fresh parsley, chopped, for garnish
Instructions
Lightly grease the inside of your slow cooker with butter or cooking spray.
In a bowl, whisk together the heavy cream, milk, melted butter, garlic, onion powder, salt, pepper, paprika, and thyme.
Arrange a layer of sliced potatoes in the bottom of the slow cooker.
Sprinkle with cheddar and Parmesan cheese, then spoon some of the cream mixture over the top.
Repeat the layers until all the potatoes, cheese, and sauce are used, finishing with an extra layer of cheese.
Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the potatoes are fork-tender.
Let the potatoes rest for 10–15 minutes before serving so the sauce thickens beautifully.
Garnish with fresh parsley and serve warm.
Tips
Slice the potatoes evenly for consistent cooking.
Freshly shredded cheese melts much smoother than pre-shredded varieties.
Add crispy bacon, caramelized onions, or diced ham for an extra hearty twist.
For a golden top, transfer the finished potatoes to an oven-safe dish and broil for 2–3 minutes before serving.
Creamy, cheesy, buttery, and packed with comforting flavor, these Slow Cooker Creamy Cheesy Scalloped Potatoes are a side dish that’s sure to disappear fast!
