Strawberry Crunch Tres Leches Cake
Ingredients
For the Cake
- 1 box strawberry cake mix (plus ingredients listed on the box: eggs, oil, water)
For the Milk Mixture (Tres Leches)
- 1 cup heavy cream
- 1 can (12 oz) evaporated milk
- 1 can (14 oz) sweetened condensed milk
For the Whipped Cream Topping
- 1 cup heavy cream (cold)
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
For the Strawberry Crunch Topping
- 18 Golden Oreos (finely crushed)
- 1 (3 oz) packet strawberry Jell-O mix (dry powder)
- 1/4 cup unsalted butter, melted
Instructions
1. Bake the Cake
- Prepare the strawberry cake mix according to the package instructions.
- Pour batter into a greased 9×13-inch baking pan and bake as directed (usually 25–30 minutes).
- Let the cake cool for about 10 minutes after baking.
2. Add the Tres Leches
- Using the handle of a wooden spoon or a fork, poke holes evenly all over the top of the warm cake.
- In a bowl, whisk together heavy cream, evaporated milk, and sweetened condensed milk until well combined.
- Slowly pour this milk mixture over the cake, letting it soak into the holes.
- Cover and refrigerate for at least 2 hours (or overnight for best results).
3. Make the Whipped Cream
- In a chilled mixing bowl, add 1 cup cold heavy cream, 1/4 cup sugar, and 1 teaspoon vanilla.
- Beat with a hand mixer on high until stiff peaks form.
- Spread the whipped cream evenly over the soaked cake.
4. Make the Strawberry Crunch Topping
- Crush the 18 Golden Oreos in a food processor or a ziplock bag until fine crumbs form.
- Melt 1/4 cup butter.
- In one bowl, mix half of the crushed Oreos with half the melted butter.
- In another bowl, mix the strawberry Jell-O powder with the remaining butter and remaining crushed Oreos.
- Combine the two mixtures until evenly blended — this gives that signature strawberry “crunch” texture.
5. Assemble the Cake
- Sprinkle the strawberry crunch mixture evenly over the top of the whipped cream layer.
- Gently press it down so it sticks.
- Cover and refrigerate overnight for the best flavor and texture.
Optional Garnish Ideas
- Fresh sliced strawberries on top
- A drizzle of strawberry syrup
- White chocolate shavings
Storage
Store covered in the refrigerator for up to 4–5 days. The flavors get even better after a day!
