Chickpea “Chicken” Salad on Cucumber Chips
My new favorite high-protein lunch or dinner — light, delicious, and super easy to make!
Ingredients:
- 1 can chickpeas, drained and rinsed (reserve the liquid)
- 1 celery stalk, diced
- 2 tbsp finely diced onion
- ¼ cup red grapes, halved or quartered (optional)
- 2 tbsp mayonnaise
- 1 tbsp Dijon mustard
- ½ tsp dried dill
- ½ tsp poultry seasoning
- Salt, to taste
- Pepper, to taste
Instructions:
- In a medium bowl, mash the chickpeas with a fork until most of them are broken down.
- Add the celery, onion, grapes (if using), mayonnaise, Dijon mustard, dried dill, poultry seasoning, salt, and pepper.
- Stir everything together until well combined. Adjust the seasoning to taste.
- Serve on cucumber slices or enjoy as a sandwich, wrap, or dip.
