Chickpea “Chicken” Salad on Cucumber Chips
My new favorite high-protein lunch or dinner — light, delicious, and super easy to make!

 

 

Ingredients:

  • 1 can chickpeas, drained and rinsed (reserve the liquid)
  • 1 celery stalk, diced
  • 2 tbsp finely diced onion
  • ¼ cup red grapes, halved or quartered (optional)
  • 2 tbsp mayonnaise
  • 1 tbsp Dijon mustard
  • ½ tsp dried dill
  • ½ tsp poultry seasoning
  • Salt, to taste
  • Pepper, to taste

 

 

Instructions:

  1. In a medium bowl, mash the chickpeas with a fork until most of them are broken down.
  2. Add the celery, onion, grapes (if using), mayonnaise, Dijon mustard, dried dill, poultry seasoning, salt, and pepper.
  3. Stir everything together until well combined. Adjust the seasoning to taste.
  4. Serve on cucumber slices or enjoy as a sandwich, wrap, or dip.
