Cheesy Ranch Oven Roasted Potatoes

Ingredients:

  • 4 large russet potatoes, scrubbed and diced
  • 1/4 cup (60 ml) olive oil
  • 1 packet ranch seasoning mix
  • 1 cup (100 g) shredded cheddar cheese
  • 1/4 cup (25 g) grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley (optional)
  • Salt and pepper, to taste

 

 

 

Directions:

  1. Preheat Oven:
    Preheat your oven to 400°F (200°C).
  2. Prepare Potatoes:
    Place the diced potatoes in a large bowl. Drizzle with olive oil, sprinkle with the ranch seasoning, and season with salt and pepper. Toss well to coat all the pieces evenly.
  3. Roast:
    Spread the potatoes in a single layer on a baking sheet lined with parchment paper or lightly greased. Roast in the preheated oven for 25–30 minutes, stirring halfway through, until the potatoes are golden brown and tender.
  4. Add Cheese:
    Remove the baking sheet from the oven and sprinkle the shredded cheddar and grated Parmesan over the hot potatoes. Return to the oven for 3–5 minutes, just until the cheese melts.

 

 

  1. Garnish and Serve:
    Sprinkle with chopped fresh parsley if desired. Serve immediately as a delicious side dish or snack.
