Chocolate Coconut Cookies
These rich, chewy coconut cookies are naturally flourless, incredibly simple, and dipped in smooth melted chocolate for the perfect finish.
Ingredients
- 4 cups unsweetened shredded coconut
- 1/4 cup sugar
- 1/2 cup coconut milk
- 1 teaspoon vanilla extract (optional, for extra flavor)
- Pinch of salt
- 1 cup chocolate chips or chopped chocolate (for dipping)
- 1 teaspoon coconut oil (optional, for smoother melted chocolate)
Instructions
1. Preheat the Oven
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
2. Mix the Cookie Dough
In a large bowl, combine:
- Shredded coconut
- Sugar
- Coconut milk
- Vanilla (optional)
- Pinch of salt
Mix until the coconut is evenly moistened and the mixture sticks together when pressed.
3. Shape the Cookies
Use a cookie scoop or tablespoon to scoop out portions.
Press each portion firmly with your hands to shape it into a compact mound or small cookie disc.
Place on the lined baking sheet, spacing them slightly apart.
4. Bake
Bake for 12–15 minutes, or until the edges turn golden.
Let them cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
5. Prepare the Chocolate Dip
Melt the chocolate (and coconut oil, if using) in a microwave-safe bowl in 20–30 second intervals, stirring each time until smooth.
6. Dip the Cookies
Dip the bottoms—or half of each cookie—into the melted chocolate.
Place them back on parchment paper and let the chocolate set.
You can refrigerate them for 10 minutes to speed this up.
