Pineapple Heaven Cake

Ingredients
Cake Batter
1½ cups all-purpose flour
1 tsp baking powder
½ tsp salt
½ cup unsalted butter, softened
1 cup granulated sugar
2 large eggs, room temperature
1 tsp vanilla extract
½ cup crushed pineapple (do NOT drain – use juice too)
½ cup milk (room temperature)
Pineapple Cream Topping
1 can (20 oz / 565 g) crushed pineapple, undrained
½ cup granulated sugar
1 tbsp cornstarch
½ cup heavy cream or evaporated milk
1 tsp vanilla extract
Optional Garnish
Whipped cream or Cool Whip
Toasted coconut flakes
Maraschino cherries
Instructions
1️⃣ Preheat & Prepare
Preheat oven to 350°F (175°C)
Grease a 9×13-inch baking dish
2️⃣ Mix Dry Ingredients
In a bowl, whisk together:
Flour
Baking powder
Salt
Set aside.
3️⃣ Cream Butter & Sugar
In a large bowl, beat butter and sugar until light and fluffy (2–3 minutes).
Add eggs one at a time, beating well after each.
Mix in vanilla extract.
4️⃣ Finish Cake Batter
Add dry ingredients in two additions, alternating with milk.
Gently fold in crushed pineapple with juice.
Pour batter into prepared pan and smooth the top.
5️⃣ Bake
Bake for 30–35 minutes, until a toothpick inserted in the center comes out clean.
Remove from oven and let cool slightly.
Pineapple Heaven Topping
6️⃣ Cook the Topping
In a saucepan, combine:
Crushed pineapple (with juice)
Sugar
Cornstarch
Cook over medium heat, stirring constantly.
When thick and bubbly, remove from heat.
Stir in cream and vanilla.
7️⃣ Assemble
Pour warm pineapple topping evenly over warm cake.
Let cake cool completely so topping sets.
Chill & Serve
Refrigerate for 1–2 hours for best texture.
Slice and top with whipped cream or coconut if desired.
Tips & Variations
Extra moist: Poke holes in cake before pouring topping
Tropical twist: Add ½ cup shredded coconut to batter
No cream? Use evaporated milk or whole milk
Lighter version: Use whipped topping instead of cream topping
